Slow cookers handle most anything. Are you in the mood for tacos later? Place a 3-pound boneless beef or pork roast into your slow cooker and cover it with this mixture:

  • 1 bottle of Corona or another light beer
  • 2 chopped canned chipotle peppers
  • 1 tbsp adobo sauce from the can
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp dried oregano
  • Black pepper to taste

Cook the meat in the sauce on low for 10 hours. Remove the meat and shred it using two forks. Drain the liquid from the crock, reserving 1 cup. Put the shredded meat in the crock and pour the cup of liquid over it. Stir and serve with your favorite taco shells and toppings.

  • 6   ounces chicken broth
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • ½ cup chopped green chilies
  • 2 cloves chopped garlic
  • 1 tsp chili powder
  • Black pepper to taste

Turn the slow cooker to low and cook for eight hours. Slice 8 corn tortillas into strips. Add them to the crock at the eight-hour mark. Sprinkle with ¼ cup chopped fresh cilantro, if desired. Ladle into soup bowls and top with a spoon of shredded jack cheese and diced avocado.
