Getting to Know the Taco
At the University of Minnesota, Professor Jeffrey Pilcher believes that tacos were invented by miners. “Taco” was the name for the paper-wrapped tubes of gunpowder that were put into holes to blast the rock and retrieve the silver ore. The first actual evidence of tacos came in the late 1800s, and they were referred to as Miner's Tacos.
In the early 1900s, tacos found their way into the United States thanks to migrants who set up food carts in cities like Los Angeles and San Antonio. While making a little cash for themselves, the migrants also introduced many to true Mexican street food. By the 1920s, tacos were catching on and becoming a popular meal in family homes.
What's interesting is that tacos didn't have the crispy taco shell until later. Softer shells were common until the 1940s.
